A simple, unassuming toast that is perfect even if it isn't. All ingredients are to taste - just go with what feels good.
Place bread in toaster and toast until medium-brown.
While bread is toasting, slice avocado by cutting it lengthwise (without peeling), around the pit until you have two equal halves. Hold the halves in each hand, then gently twist one half to dislodge it from the pit without smashing the avocado flesh. Lay halves cut side up on the counter.
Use a knife to pierce the avocado pit and leverage it to remove it from the avocado. Discard pit. Without piercing through the skin, cut thin slices of avocado flesh lengthwise. Set aside.
When the toast is done, place it on a plate and spread each slice with 1 tbsp mayonnaise. Use a spoon to scoop the slices out of the avocado and onto the toast. Don't worry about making them look perfect. Smash them onto the toast with the back of the spoon. Repeat for all three slices of toast.
Sprinkle avocado with salt and pepper to taste. Add any additional toppings. Enjoy.
