In a medium size frying pan, begin browning the meat over medium heat. Sprinkle in seasonings, and stir thoroughly while the meat cooks.
When meat is thoroughly cooked and no longer pink, serve as desired.
Stir the meat and seasonings together thoroughly in a bowl. Roll heaping tablespoonfuls of meat into balls, like you're making meatballs. Gently flatten the balls until they are about 1/2-3/4-inch thick.
Heat a frying pan over medium heat. If using chicken or turkey, melt a tablespoon of fat in the pan to prevent sticking. Place the patties in the pan, careful not to over crowd them. Cook for about 4 minutes, then use a spatula to gently flip them over. Cook for an additional 4 minutes, until patties are no longer pink inside.
Transfer to a plate lined with a paper towel, then serve.
For both methods, you can stir the meat and seasonings together the night before.
Cover and refrigerate, letting the flavors meld overnight.
This recipe makes easy, inexpensive sausage. However, you can enhance it by adding an egg white to the patties (to make them stick better), or a few additional seasonings.
